INGREDIENTS:
• 6 eggs, beaten
• 1 bag frozen spinach, thawed,
chopped and squeezed
• ¾-cup grated parmesan cheese
• Salt and pepper to taste
INSTRUCTIONS:
Mix all ingredients together. Coat frying pan with cooking spray. Drop egg mixture into pan like
pancakes. Fry pancakes on one side until lightly browned and flip over until done.
