PROTEIN OATMEAL PANCAKES
Do you need protein in the morning?
Check out this alternative to the
traditional pancake.
Serves: 8
Serving Size: 5.5 oz
Prep Time: 15 minutes
Inactive: 5 minutes
Cook: 20 minutes
TOTAL: 40 minutes
Ingredients:
• 1 cup whole wheat flour
• 1 cup oatmeal
• 2 cups milk
• 3/4 cup all purpose flour
• 1/4 cup brown sugar
• 1 egg
• 1 banana
• 1 cup vanilla whey protein powder
• 2 dashes cinnamon
• 2 dashes nutmeg
• 1 tablespoon almond butter
• 1 slice sprouted whole grain bread (e.g., Ezekiel
®
bread)
• Strawberries
Instructions:
Place oats in blender. Blend until it resembles flour texture. Add banana, slice of sprouted whole
grain bread (any flavor), and milk to blender. Blend until banana and bread mixes. Set aside.
Add all dry ingredients (except almond butter) into a bowl then add eggs and the milk blend. Whisk
and set aside. Let it rest for 5 minutes.
Cook pancakes on a griddle or skillet. Spread almond butter on pancake. Add strawberries as
topping. Enjoy! If you wish, replace banana with blueberries or another fruit topping.
