breakfast or brunch frittata.

Ingredients:
• 10 eggs
• 1/4 cup milk
• 2 russet potatoes
• 1 bunch asparagus
• 1 green pepper
• 1 red pepper
• Vegetable cooking spray
• 1 tablespoon olive oil
Instructions:
Preheat oven to 350 degrees. Beat 10 eggs in a large bowl. Add a little milk. Peel and dice 2 potatoes.
Add potatoes to boiling water. Boil for about 10 minutes. While potatoes are cooking, cut peppers
and asparagus into small pieces. Drain potatoes. In a large saute pan, add potatoes, asparagus and
peppers with a tablespoon of olive oil. Saute for approximately 15 minutes. Drain, making sure all oil
is out. Add to beaten eggs. Spray a 9" pie dish with vegetable spray. Add all ingredients and bake
for 45 minutes. Cool slightly and cut into pie slices. Delicious!!
