MMMMM MUSSELS

Ingredients:
• 5 pounds fresh de-bearded Penn Cove mussels
(readily available at Costco)
• 1 bunch basil
• 1 head garlic
• 1/4 cup walnut oil
• 2 cups white wine
• 1 teaspoon salt
• 1 tablespoon pepper
• 1 loaf bread for dipping
Instructions:
In a stock pot on high heat, saute garlic and walnut oil until caramelized. When caramelized, deglaze pot
with 2 cups white wine. Add cleaned mussels to pot with basil, salt and pepper. Cover pot and simmer
on medium heat for 5 minutes. Remove from heat and keep covered.
Grab loaf of crusty GOOD bread and slice into pieces. Remove the lid from the pot and pour contents
into a large bowl. Remove any unopened or broken mussels. Dunk bread into broth— that's the best
part. Enjoy! You might want to double this recipe as sometimes 5 pounds is just a tease!
