CHICKEN & MARINADE:
• 2 pounds boneless skinless chicken breasts
• Wooden skewers
• 1 tablespoon ground nutmeg
• 1 tablespoon ground allspice
• 1 tablespoon ground cinnamon
• 1 red onion, chopped
• 3 green onions, chopped
• 1/4 cup extra-virgin olive oil
• 1 cup freshly squeezed orange juice
• 1/4 cup low sodium soy sauce
• 1/4 cup fresh thyme sprigs, chopped
• Juice of 1 lime
• 3 cloves garlic
• 1 scotch bonnet pepper, chopped
• 1 tablespoon peeled, grated fresh ginger
• 1/2 teaspoon salt
• 3 dashes pepper
MANGO SALSA:
• 2 tablespoons brown sugar
• 3 tablespoons freshly squeezed lime juice
• 1/2 teaspoon hot sauce
• 1 tablespoon minced ginger
• 1 mango, diced
• 1 cucumber, diced
• 2 green onions, diced
CHICKEN & MARINADE: Cut chicken into large
chunks. Soak wooden skewers in water. In a food
processor, combine all ingredients except chicken;
puree until smooth. Add all but 1/4 cup of the
mixture in a 1 gallon plastic sealable bag. Add
the chicken to the bag and let marinate in the
refrigerator for 1 to 2 hours. Reserve and
refrigerate remaining 1/4 cup of marinade.
Remove chicken pieces from marinade and season
well with salt and pepper. Thread 3 pieces of
chicken onto each skewer. Grill chicken for 5
minutes on each side, or until golden brown and
juices of chicken run clear when pricked with the
end of the skewer.
MANGO SALSA: Combine the brown sugar,
lime juice, hot sauce and ginger in a medium
bowl. Mix thoroughly and add the mango,
cucumber and green onions. Toss and refrigerate
for 1 hour.
Top the kebobs with the mango salsa and serve
with 1/4 cup reserved marinade as a dipping sauce.
