STUFFED GRILLED CAPRESE TOMATOES

A new twist on the old fashioned
caprese salad.
Serves: 8

TOTAL: 45 minutes
Ingredients:
• 8 plum tomatoes
• 1 pound fresh mozzarella cheese
• 8-16 fresh basil leaves
• 10 oz balsamic vinegar
Instructions:
Balsamic Glaze: Place 10 oz of balsamic vinegar in pot and boil until vinegar is reduced by half (5 oz).
Slice mozzarella into 8 equal sized sticks. Core tomatoes and slightly hollow out. Insert one piece of
cheese and 1-2 leaves of basil depending on desired taste. Place on preheated grill and grill until skin
starts to blister and cheese is slightly melted. Drizzle balsamic glaze on tomatoes and enjoy.
