TOTAL: 8 minutes
Ingredients:
• 2 dozen medium pacific oysters
• 3 whole ripe roma tomatoes
• 1 whole walla walla sweet onion (or red onion)
• 3 whole fresh jalapeños, seeded
• 1 bunch fresh cilantro leaves
• 2 whole fresh limes
• 1 clove fresh garlic
• 1 pinch sea salt
• 1 pinch fresh cracked black pepper
Instructions:
Chop tomatoes, onions, jalapeños, cilantro and garlic. Place in bowl with juice of 2 limes, salt and
pepper. Toss to mix. Rinse and shuck oysters leaving nectar and meat on 1/2 of shell.
Place oysters on barbecue rack, medium heat or coals. Place 1 heaping tablespoon vegetable
mix on each oyster. Cover and barbecue for 3 minutes to cook. Remove from heat until cool
enough to eat. Enjoy and repeat!
