CHICKEN AND RICE WITH A KICK

Not your typical chicken and rice, you can cook it in
a crockpot and come home to a good meal.
Serves: 6
Serving Size: 17 oz
Prep Time: 20 minutes
Inactive: 0 minutes
Cook: 5 hours
TOTAL: 5 hours 20 minutes
Ingredients:
• 4 boneless chicken breasts
• 2 14-1/2 oz cans diced tomatoes with green chiles
• 1 medium green pepper, chopped
• 1 garlic clove, minced
• 1 medium onion, chopped
• 1 teaspoon smoked paprika
• 3/4 teaspoon salt
• 1/2 teaspoon ground cumin
• 1 teaspoon ground chipotle pepper
• 1 teaspoon liquid smoke (optional)
• 4 cups cooked brown rice
• 1 15 oz can black beans, rinsed and drained
• 1/2 cup reduced-fat sour cream (optional)
Instructions:
Place chicken in a slow cooker. In a bowl combine tomatoes, green pepper, onion, garlic, paprika,
salt, cumin and chipotle pepper. Pour over chicken. Cover and cook on low for 5-6 hours.
Shred chicken with two forks. About 30 minutes before ready to serve, cook rice and beans as
directed on package. Add to crockpot, and let heat with chicken. Add reduced-fat sour cream if
desired, or hot sauce, my favorite!
