MEDITERRANEAN CHICKEN WITH ORGANIC BROWN RICE PASTA

Ingredients:
• 4 cups organic brown rice pasta
• 3 cloves garlic
• 4 sprigs fresh basil with leaves chopped
• 2 teaspoons lemon juice
• 1 cup parmesan cheese
• 2 pounds boneless skinless chicken breasts
• 1 12 oz can black olives
• 1 pint fresh mushrooms
• 3 tablespoons olive oil
• 1/2 cup sun dried tomatoes
Instructions:
Prepare pasta as directed in a large pot. Cut your chicken into strips and set aside. Heat 1-1/2
tablespoons of olive oil in a large skillet over medium heat. Add the jars of black olives and
sliced mushrooms, half of the tomatoes and desired garlic. Simmer for about five minutes. Drain
pasta, return to pot and add the entire contents of the skillet to the pasta.
Add more olive oil to the empty skillet along with sliced chicken and remaining tomatoes. Add salt,
pepper, and any spices you like. Once the chicken is done, add fresh chopped basil and combine with
the pasta. Add lemon juice and parmesan cheese to taste.
