OPEN-FACE SALSA JOE
You and your kids will love this healthy salsa-filled
version of everyone’s favorite—Sloppy Joes.

Ingredients:
• 1-1/2 pounds lean ground beef
• 1 jar chunky salsa
• 1 package wheat English muffins
• 1 package low-fat Mexican blend cheese, shredded
• 1 tablespoon olive oil
Instructions:
Pre-heat oven to broil setting. Brown ground beef (can substitute ground
turkey) until no longer pink. Drain. Return to pan on medium low. Add jar of
salsa to meat mixture and heat until warm.
Meanwhile, split English muffins and brush with olive oil. Place halves on broiler pan or baking sheet
and place under broiler just until lightly browned.
Top each half of muffin with meat mixture. Sprinkle with shredded cheese. Return to broiler just until
cheese melts. Serve open-faced.
