EASY PASTA E FAGIOLI
An easy Pasta e Fagioli recipe that rivals any national
restaurant chain. It is so simple and can be
modified to your taste and needs.

Ingredients:
• 1 pound lean ground beef or ground turkey
• 49 oz chicken broth fat free, low sodium
• 14.5 oz beef broth fat free, low sodium
• 15 oz can white beans
• 6 oz can tomato paste with Italian seasonings
• 14.5 oz can diced tomatoes with basil, garlic and oregano
• 1/2 cup chopped celery
• 1/2 cup shredded carrots
• 1 cup ditalini or tubetti pasta (whole grain if you prefer)
Instructions:
Brown the ground beef or turkey. Add the chicken broth and beef broth. Add the tomato paste and
the diced tomatoes (the herbs and spices in the Italian varieties available are the perfect amount of
spice for this soup). Stir until the tomato paste is incorporated. Add the celery, carrots, beans and
pasta. Cook over medium heat until the celery and carrots are cooked (or until they are the texture you
prefer, by this time the pasta should be cooked as well).
