CREAMLESS BROCCOLI CHEDDAR SOUP
Who needs fat-filled cream when non-fat
yogurt gives you the same smooth texture
in this creamless broccoli cheddar soup?

Ingredients:
• 1 onion, chopped
• 1 clove garlic, minced
• 1 pound broccoli, rough chopped
• 1 bay leaf
• 1 teaspoon dried thyme
• 2-1/2 cups low sodium chicken or vegetable stock
• 1/2 fresh lemon, juiced
• 1/2 cup non-fat cheddar shredded
• 1/2 cup non-fat plain yogurt
• 1 tablespoon olive oil
• Salt and pepper to taste
Instructions:
Put olive oil in stock pot and saute onion and garlic until soft. Add broccoli, stock, thyme, and bay
leaf. Bring to a boil, cover and simmer for 25 minutes. Take off heat and remove bay leaf. Using an
immersion blender, blend until smooth. Return to low heat and add cheese, lemon juice and yogurt.
Heat until cheese melts. Salt and pepper to taste.
