FEATHER-N-FIN SALAD
Jazz up your traditional chicken salad with shrimp! Then
personalize it even more with your favorite nuts and spices.
Serves: 6
Serving Size: 9 oz
Prep Time: 10 minutes
Inactive: 10 minutes
Cook: 10 minutes
TOTAL: 30 minutes
Ingredients:
• 1/2 pound medium shrimp, 16-21 pieces
• 3 boneless chicken breasts, grilled
• 4 dashes Old Bay
®
• 1/2 cup chopped celery
• 1/2 cup fresh diced onion
• 2 tablespoons cilantro, finely chopped
• 2 dashes salt
• 5 pinches fresh cracked pepper
• 1 tablespoon lemon juice
• 1 cup extra-lite mayonnaise
Instructions:
With a splash of water, pan fry the shrimp with Old Bay
®
seasoning for 3-4 minutes and let cool. Cut
up the grilled chicken breasts into small cubes and place in a large mixing bowl with a dash or 2 of
Old Bay as well. Add fresh ingredients finely chopped to the mixing bowl (onion, celery, cilantro).
This is the stage where the flexibility comes in. You can add peanuts, walnuts, sunflower seeds,
craisins, oregano, parsley, even tuna to make the salad more filling. The variations are almost
limitless. Cut shrimp in half or quarters and add to the mixing bowl. Then add lemon juice to the top
of the mix. Last, add about 1 cup of mayonnaise—more or less depending on your preference of
consistency. Mix well and enjoy.
