COLLARD GREEN SOUP
This could be the perfect soup! It’s low in fat, high
in fiber and collard greens help decrease the risk
of getting cancer.

Ingredients:
• 1 bunch collard greens
• 1 can red kidney beans, drained and rinsed
• 1 onion, quartered
• 1/2 pound spaghetti
• 3-4 quarts water
Instructions:
Boil the water in soup pot with onion for 10 minutes. Add the kidney
beans. Using a submersible blender ( or remove and use a regular blender),
mix/puree for 3 minutes add bite size pieces of the collard greens and spaghetti
into the pot and stir. When the spaghetti noodles are done, your soup is ready to
serve. Salt and pepper to taste.
