INGREDIENTS:
• 2 pounds lean ground turkey
• 5 bell peppers, halved
• 1 shallot, chopped
• ½ red onion, chopped
• 1 bunch cilantro, chopped
• 2 cloves garlic, minced
• 1 cup low sodium vegetable broth
• 1 cup corn
• 1 can great white northern beans, drained and rinsed
• ½-cup low-fat cheddar cheese
INSTRUCTIONS:
Preheat oven to 350 degrees. Brown the ground turkey with chopped shallot and red onion. Add gar-
lic, corn, beans and cilantro. Add vegetable broth and simmer for 15 minutes. Cut bell peppers in half,
lay flat in dish and pour turkey mixture over bell peppers. Top with cheese and a few red onions.
Cover with foil, and bake for one hour. Enjoy!
