Ingredients:
• 2 eggs
• 1 cup spinach
• 1 roma tomato
• 2 tablespoons feta cheese
• 1 teaspoon olive oil
Instructions:
Heat a non-stick pan over low-medium heat. Have eggs beaten, spinach rinsed, roma tomatoes
diced and cheese ready on the side.
Add olive oil to pan and warm. Add spinach and saute. Once the spinach has broken down,
add eggs, salt and pepper to taste. Scramble, mix and cook. Place the scramble on a warm plate.
Garnish with diced tomatoes and feta cheese.
