BANANA LEAF WRAPPED FISH & VEGGIES

Ingredients:
• 4 6 oz fillets, can use tilapia, salmon, snapper, halibut or mahi-mahi
• 2 cups yellow zucchini
• 2 cups green zucchini
• 1 cup sweet onion
• 4 tablespoons olive oil
• 1 teaspoon fresh garlic
• Juice of one lemon
• 1 tablespoon new mexico chile powder or california chile powder
• 4 banana leaves
Instructions:
Rinse banana leaves and set aside. Rinse and cut zucchinis, sweet onion and fresh minced garlic.
Mix in a bowl together with lemon juice, olive oil and chile powder. Salt and pepper to taste.
Lay out banana leaves. Place one 6 oz piece of fish on each. Top with vegetable mixture. Wrap
leaves. Grill for 12 minutes.
