GARBANZO BEAN SALAD
This is a tasty upgrade of the 5-minute garbanzo
bean salad from the World's Healthiest Foods
website.

Ingredients:
• 1 15 oz can garbanzo beans
• 1 15 oz can diced tomatoes, drained
• 1/2 red onion, diced
• 1/2 cup mushrooms, baby bella, sliced
• 1/2 cup red pepper, diced
• 1/2 cup quinoa, cooked
• 2 tablespoons chopped fresh parsley
• 2-4 cloves garlic, minced or pressed
• 1/4 cup kalamata olives
• 1 teaspoon basil, dried
• 1 teaspoon oregano, dried
• 3 tablespoons extra-virgin olive oil
• 1/8 cup apple cider vinegar
Instructions:
Press or mince the garlic. Dice the onion and allow both ingredients to sit for five minutes to maximize
their health benefits. Drain and rinse the garbanzo beans and add to a large mixing bowl. Combine all
of the ingredients and mix. I like to prepare the night before so the flavors have time to meld together.
Eat alone or use as a salad topper.
