HOMER HASH BROWNS CHA CHA CHA
Sweet potatoes add flavor, fiber and
Vitamin A as well as the “cha cha cha”
to these hash browns.

Ingredients:
• 1/2 cup sweet potatoes or yams
• 1/2 cup russet potatoes
• 1/4 cup onion
• 1/8 cup green pepper
• 1 teaspoon chia seeds
• 2 eggs
• Cooking spray (butter flavor)
• Salt substitute and pepper to taste
• Cilantro (optional)
Instructions:
Peel and grate potatoes, place on paper towel and pat dry. Dice onions and pepper. Spray skillet
with cooking spray and heat to medium high heat. Mix potatoes, onions and peppers together and
add to skillet. Cook for 7 to 9 minutes turning every few minutes (potatoes should be crispy). Remove
from skillet. Top with chia seeds. Cook 2 eggs over easy in same skillet and top hash browns. Sprinkle
with salt substitute, pepper and cilantro. A side of salsa is a good addition!
