BAKED HOME-FRIED POTATOES
Baking these “fried” potatoes gives you great
potato taste with less fat and calories.

Ingredients:
• 1 russet potato, chopped into small cubes
• 1 onion, chopped
• 1 green pepper, chopped
• 2 tablespoons olive oil, divided
• Salt and pepper
Instructions:
Preheat oven to 400 degrees. Wash the potatoes and cut up into small cubes ( I leave the skin on
because it adds more fiber to the dish). Mix the potatoes with 1 tablespoon of olive oil and salt and
pepper. Bake for 40 minutes or until potatoes are browned, turning once halfway through baking.
Meanwhile, heat up a skillet with the remaining tablespoon of oil and cook the chopped onion and
green pepper with a salt and pepper to taste.
When the potatoes are done, place in the skillet with the onion and green peppers and mix together. I
sometimes put other spices on the potatoes and onions to change the flavor of them. You can add chili
powder and cumin for a Mexican flavor or anything that you can think up. The sky's the limit with these.
